In addition to a gentle decaffeination process that preserves the coffee’s flavour compounds as much as possible, the right roast is crucial for a great taste experience. Decaffeinated green coffee behaves differently during roasting compared to its caffeinated counterpart, as the decaffeination process alters the beans’ roasting characteristics. We developed the Carbonic Natural® process specifically to preserve the flavour and quality of high-grade Arabica coffees. By using liquid natural carbon dioxide, which selectively extracts almost only the caffeine, we’re able to produce a decaffeinated coffee that’s virtually indistinguishable from its caffeinated version. That’s because key flavour carriers – such as aroma compounds, acids, sugars, lipids and amino acids – remain in the bean. The absence of caffeine itself does not negatively impact the flavour either. While caffeine is technically a bitter substance, the typical content of 0.9–1.4% in Arabica green coffee (based on dry weight) is so low that it has no noticeable effect on taste – whether present or removed.
Not entirely, as trace amounts of caffeine usually remain in the bean – removing them completely would be extremely complex. However, the caffeine content in roasted coffee is typically reduced by at least 90%, assuming an original Arabica caffeine content of 0.9–1.4% (dry weight). In Germany, and many other countries, only 0.1% caffeine is legally permitted in roasted coffee for it to be classified as decaffeinated and deemed safe from any unwanted side effects associated with caffeine.
Exactly. Carbonic Natural® is our brand name for the CO₂ process, which we developed and patented in 1987 at CR3 Kaffeeveredelung. What makes our process special is the use of CO₂ in its so-called subcritical state. At around 20°C and 70 bar pressure, CO₂ becomes liquid, making it ideal for a gentle and selective extraction of caffeine while also allowing for caffeine recovery. To this day, we remain the only company producing high-quality decaffeinated green coffee using this method for clients across the globe.
